Zoodles

Zoodles, spiraled zucchini, that replaces noodles.  I bought a handy dandy hand held vegetable spiraler thingy the other day.  I spiraled (not really sure if this is the right term) 4 zucchinni’s after peeling them.  I watched a video on what to do.  It said to put them on a paper towel lined pan in a 200 degree oven for 30-40 minutes to dry them out a bit.  So… after 45 minutes I checked them and they were still pretty wet.  I had to get the boy from karate so I turned the oven off and just left them in the oven.  Came home and rolled them in 2 layers of paper towels and then a towel to remove as much of the moisture as possible.  My tutorial video told me to cook the noodles a bit more in the sauce you are serving them with. I was making a white garlic sauce with shrimp to accompany our zoodles.  My sauce was thick and creamy and delicious, then I added my zoodles.  It instantly became soupy.  Next time I will definitely serve in bowls instead of plates.  What looked like a ton of zucchini barely ended up being enough for the 4 of us.   Good thing my kids just liked the shrimp and don’t care for zucchini.  Although, being the mean Momma that I am, they had to eat a little of it.  Despite the soupiness, I loved zoodles.  I thought they were a great low carb substitute for pasta.  I’d like to keep working with it, figure out a way to dehydrate it a bit more.  If you have any ideas or suggestions, let me know!!
