Does going low carb really make a difference?

Justin and I decided a couple weeks ago to reduce the amount of carbs we've been eating and try to eat less refined sugar. We've been unhappy with how much junk food we had been eating and were a bit dismayed that the kids were constantly asking for sugary treats in lieu of something more healthy.  I had been wanting to lose weight and my doctor said the quickest way was to cut out carbs. I'm not going to say the weight has just fallen off, but I do feel healthier and better about the foods i'm eating and feeding my family.  This weekend we had pancakes made with almond flour, and I was surprisingly pleased that they were tasty and delicious. Tonight we had cauliflower crust pizza.  It was a a lot of work but it was much healthier and quite delicious.  I don't know where I'd be without Pinterest.  All my recipes have come from them and I just modify a bit to meet our families desires.

The almond pancake recipe I used was from here.  I did add 2 Tablespoons of natural cane sugar to the batter.  It made them quite yummy.



The pizza was equally delicious, but definitely not as easy as throwing a frozen pizza into the oven.  A friend of mine shared this recipe with me and while it took a bit of time and work, it really was quite delicious.  The recipe for this awesome pizza can be found here.  I did have a little bit of goat cheese that I used up but not the full amount so I added a little bit of whipped cream cheese.  I used 2 eggs instead of one and spiced it up pretty good with my Tastefully Simple stash of seasonings specifically, Mama Mia and Garlic Garlic.  

Low carb has been doable for my family, but it certainly has been a bit more planning for meals then I'm used to.  I'm sharing a lot of my meal ideas and recipes because several people have told me they're enjoying them.  If you know of any great low carb meals... let me know!!!  I'm off to go enjoy a delicious La Croix sparkling water... yum!!
